Hello!! Hope you are having a wonderful weekend. It was soggy and dreary here but its been good for all of the flowers and perennials just waiting to pop out of the ground! Today,  we are in for a beautiful day (finally). We had a very strange winter so I am thrilled spring is here. We went to a party (first one I have attended since my mom passed away) and frankly I was reluctant to go (as I am to many things) but did, and once I was there it was enjoyable. I still feel like its two steps forward one step back. I need to pace myself and do things in increments. Grief is complex and so different for everyone.

My business and having new projects on the burner are definitely fuel that keeps me both busy and going forward in the best, most productive way possible. I know I will eventually get my mojo back. I am trust the process and God. I hope you are enjoying a wonderful weekend too. Onward to my post this week-

2 SHRIMP TACOS IN A MATTER OF MINUTES!I made these the other night and they were sooooo good. Very easy too. Here is what I did below. My family asked me to put this into my weekly dinner rotation….tasty and actually pretty healthy! I have noticed my boys stopping in more when I cook their favorite dinners:) My phone died right as I was serving but you get the idea!

  • 2 lbs of shrimp (large and deviled)
  • 1/2 bellpeper
  • 1/2 large onion or scallions finally chopped
  • Flour toritillas
  • Shredded lettuce and finely diced tomato
  • 1/2- 3/4 cup cilantro
  • 3 ripe avocados
  • Fajita seasoning
  • Chili powder
  • Salt and pepper
  • Fresh lime (2 good sized limes)

In a bowl, place your cleaned shrimp and gently mix in with fajita mix, add chili seasoning to taste, salt and pepper. Sprinkle lime juice liberally over shrimp, mix gently. Cover and let sit. Meanwhile, in a skillet heat up your oil then fry your onion and bell pepper. Once cooked, and once your shrimp as marinated for at least 30 min fold in shrimp cooking on a medium heat. Shrimp cook fast (about 6 min for the size I used) I added a little oil as they were cooking, sprinkling more lime juice on top as they cooked.

In the meantime, scoop out your avocados, I like to cut with a knife (not use a spoon) to mix as I prefer a chunkier guacamole. Add a little onion, a little tomato, salt, pepper and cilantro. Add to your liking (we like a lot of cilantro and lime). Use the juice of half a lime. Use knife to fold in all ingredients, set aside. As the shrimp are done, in a skillet,  cook flour tortillas (about 45 seconds per side) until just starting to brown/bubble, quickly add 4-5 large shrimp in center, add lettuce, tomato a sprinkle of cilantro, a healthy scoop of guacamole and a sprinkle of lime juice and serve. Sit back for the compliments to roll in. My family loved these and there was not a single crumb left:)

4 THREE COMPELLING DOCUMENTARIES YOU NEED TO WATCH They are dramatic, sad, tragic, compelling and there still remains a mystery in each of these stories. These are the kind you binge watch,  impossible to stop watching, I was sitting on the edge of my seat for all three of these(all on Netflix)

 

 

5 WRITE IT DOWN!  I am a writer, I love to write everything down. Love making my lists and best thing is being to cross things off that list! I do plug things into my phone but I am a consummate list maker. So always need notepads around. Always have one at my desk and one in my car, often will carry one around in my bag too.

Something so cathartic about writing things down. 6 A BOOK YOU MUST ORDER You know when I get a book I love, that I tell you about it immediately. I get quite a few books sent to me,  but only feature the ones I really love. Well this one is a must have.

This is not one of those books with a pretty cover that you flip through in 10 minutes, this is a book who’s cover gives you a glimpse of the beauty that lies between the pages. The kind of book you want to sit down with, and spend hours reading, taking in every beautiful picture.  A beautiful storyline of her first formative years in Paris feature incredible florals mixed in with stunning vignettes and even recipes,  so my kind of book. 7 SUNDAY’S SURVEY Don’t know if you are on Tiktok or not. I love going on lately but do not post anything though I did reserve our name in the event we ever want to have an account there.  Curious if you have an opinion on the potential ban here in the U.S.,  I would be shocked if it actually happens but I guess its within the realm of possibility….and seemingly more so in recent days.

I heard one very well known tech  person describe the Chinese as getting the intellectual version, where they learn about space and physics, how to budget for a family, culture, etc…and that we (the U.S.) were sent the “version on crack”. Where those things that pervade the Chinese version are no where to be found here. He said in China the average kid aspires to be an astronaut where in the U.S. now,  the number one aspiration is to be an influencer/celebrity. Go figure. Thoughts?

Tina, I watched two out of the three of those documentaries…some very disturbing. Just started watching Vienna Blood and love the scenery, cast, costuming, etc. Love your Seven on Sunday. Regarding social media, I find it to be a complete time suck so I am really moving away from it. Never started an account on TikTok ..for all the right reasons. Life is too short to always be on your phone or computer. Happy Sunday!

Much to my son’s chagrin, I write everything down as well. I write appointments in a cute Mary Engelbreit calendar, that I keep in my purse and rely on it instead of the calendar on my phone. So, I had to order a very pretty blue chinoiserie notepad, that will look great on my nightstand!
Those shrimp tacos look scrumptious and so easy; great for a summer dinner al fresco.

I subscribe to the Island Packet, Hilton Head area newspaper. I followed the sad story of the Murdaugh family. It was too horribly fantastic to be believed but sometimes truth is stranger than fiction ~most especially in this case.
