We have had some lovely spring weather, and it’s been a treat. Starting to see everything come through the ground and spring has arrived at last! Hope things are blooming and shining wherever you may be.

Oh, what a week. It was S T R E S S F U L. I plan on taking today to have “me” day at home. If I lounge around in my robe watching documentaries all day, so be it. Our warehouse is overflowing (in a good way) but it’s been overwhelming too. As a business we are going through a lot of change with regard to growing well beyond what was expected so scaling up, along with some changes within our team made for a stressful week. Change is good but I admit. I have a hard time embracing it. It’s a new week and I feel well rested and ready to tackle what this week will bring.

As I hate change, the platform on which I make my blogposts totally changed and there’s a huge learning curve along with it. Not the week I needed this to happen! That said,I got this post under my belt (felt like a miracle) so hopefully as I ease into this new platform, not by choice, it will feel less daunting.

We also went to a party this weekend, I am starting to venture out a bit more…..still feels very much like 2 steps forward and one step back.But I recognize its important to socialize and get out and try to get back to some semblance of my “normal life” even if it is still shrouded in a sadness over missing my mother so much. Anyway let’s move along to my post this Sunday…….

1 A PRETTY SPRING TABLE Had so much fun putting this pretty table together, spring has sprung over here and I just adore how fresh and spring like this table feels. It features our pierced porcelain chargers mixed in with our Hydrangea Garden melamine (yes, you can mix them!) and our darling mini hydrangea garden pagodas, these would also make the prettiest little favor if this was for a birthday, shower, etc…..

2 INSTAGRAMS OF INTEREST Always something beautiful and inspiring to see on Instagram, this is random but so pretty nonetheless…

3 A GREAT NEW SERIES I love documentaries and could watch those without ever seeing a movie again. I loved Lenox Hill, so if you did too, then you will love Emergency:NYC . I find it incredible fascinating and insightful as to how such a populated area as the boroughs of NYC are able to handle the immense load of emergencies on a daily basis like a well oiled. machine I also loved getting to hear from the doctors, nurses and staff and their perspective. I just love this series and if this genre is up your alley, I highly recommend it.

4 OUR INCREDIBLE LATTICE URNS AND EGGS! How I love our new eggs! We are still shipping eggs out, and can get them to you by Easter. I am so smitten with these, in all their sizes. I loved pairing the 24″ eggs with our fabulous lattice scalloped planters (more coming in 5 weeks) I am starting to also decorate my table for Easter and its going to be so festive with these beautiful eggs! 5 ONE GORGEOUS APARTMENT I only know of Shonda Rhime’s as the brains/creator behind the creation of Grey’s Anatomy, but what I really loved was discovering her beautiful NYC apt. So pretty and love all the beautiful layers. A lot to take it, but to me, Its a feast for the eyes!S

6 A DELICIOUS TERIYAKI SALMON RECIPE This is one of my families favorites, it is so flavorful and healthy, I serve it with asparagus and jasmine rice and always start with a big salad. Funny as I am not a huge fan of salmon, but I so love this recipe. Here is what you need to do-

  • 2cm piece of fresh root ginger, finely sliced
  • 2 garlic cloves, peeled and finely sliced
  • 3 scallions finely chopped
  • 5 tbsp soy sauce
  • 2 tbsp maple syrup
  • 1 tbsp mirin (rice wine)
  • Toasted sesame seeds (optional)
  • Olive oil
  • 3 TBSP teriyaki sauce (I use Kikkoman)
  • 4 salmon fillets or one large filet
  • Thinly sliced lemons
  • Sea salt and freshly ground pepper

  • Put the ginger and garlic into a bowl and mix with the soy sauce, teriyaki sauce maple syrup, sesame seeds,mirin, scallions (reserve a small amount to put on top after cooked) and a drizzle of olive oil.
  • Place the salmon fillets in a dish, season with salt and pepper and pour the sticky dressing over them. Cover with cling film and set aside in the fridge to marinate for up to 2 hours, but at least 30 minutes.
  • You can bake in an oven set at 350 for approx 20 min OR Place a large frying pan over a medium heat and add a dash of oil. When hot, add the salmon, skin side down, reserving the marinade. Cook for 2 minutes, then pour in the reserved marinade and cook for
    a further minute or so, until the salmon fillets are opaque halfway up the sides. Turn them over and cook on the other side for 3–4 minutes, basting with the sauce so that the salmon is well coated. Add a splash of water if the sauce is too thick. For the last 5 minutes of cooking I will add thinly sliced lemons over the entire salmon.
  • Serve the salmon fillets on individual plates, spooning over any teriyaki sauce left in the pan over the bed of jasmine rice.
  • For asparagus I normally add them on parchment paper on a baking sheet and add some of the reserved sauce to drizzle over them, bake for about 10 min.

7. SUNDAYS SURVEY Easter is coming..curious if you are hosting, going to be a guest, going away, or what you do to celebrate (if you celebrate Easter) It will be low key this year on this end, my dad will join us and I am hoping my sister and her family will work it out to come as well, fingers crossed. We will probably go to a brunch at our club and have an early dinner at home. Just a nice family day, our first Easter without my beloved mom. These “firsts” are so difficult.

I am having hip replacement surgery on Thursday before Good Friday and my husband and I will go to my son’s and daughter-in-law’s home for several days. They will have a combo of take away and home cooked food. I am thankful to God for family to take care of me. Daughter will join and take us home and stay for several days. God willing, we will have a Mediterranean cruise at the end of May.
I enjoy your blog very much and have prayed for you often during your sad times.
