Hello friends, hope this finds you well. I will be out of town, put this in my draft box and sure hope it posts on time! Hope you are having a wonderful weekend, And here’s my post.……

1  BEST CHICKEN SALAD! Posted a few times about this,  a few years go but good things bear repeating. This is sooo good! Give it a try,  if you like chicken salad, you will not be sorry! Every time I make it, I wonder why I am not making this weekly. So good!

BEST EVER CHICKEN SALAD

  • 3 – 4 lbs of chicken parts (bone-in, skin-on thighs and breasts work well) (you’ll need about 3 to 4 cups of cooked chicken) I cut mine super small I use chicken boneless chicken breasts
  • 2 tablespoons quality olive oil
  • 1 cup of seedless grapes, sliced in half (red and green varieties are great)
  • 1 cup almonds, thinly sliced (optional) This is a must add, gives great texture
  • 2 celery ribs, chopped thinly
  • 3 scallions, thinly sliced, white and green parts
  • 2 tablespoons fresh dill, chopped ( I about doubled this as I love dill and it adds a lot to this)
  • 1 tablespoon fresh parsley, chopped
  • 1 cup mayonnaise (I USE 1/2 cup and 1/2 greek plain yogurt)
  • Juice of 1 lemon or more
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Kosher salt (start with ½ teaspoon, then add more, to taste)
  • Freshly ground pepper
  1. Pre-heat oven to 350 F.
  2. Rub oil all over the chicken pieces and sprinkle with salt and pepper.
  3. Bake for 35 to 45 minutes (internal temp should reach 165 F). .
  4. Remove the chicken, let cool, then pull the meat from the bones and roughly chop.
  5. In a large bowl, mix together the chicken, grapes, almonds, celery, scallions, dill & parsley
  6. In a small bowl, mix together the mayonnaise, lemon, mustard, salt and pepper.
  7. Add the mayonnaise mixture to the chicken mixture, and gently stir until will mixed.
  8. Refrigerate for at least an hour.
  9. Serve on a bed of green leaves with sliced tomatoes and avocado. Or, serve on bread with green leaf lettuce. Add more toppings to your taste!

I have always been a fan of Christian Bale, someone who grew up with very humble beginnings and has recently shown what it means to really give back. 7  SUNDAY’S SURVEY  Are you someone who is consistent with their clothing choices season to season? Or do you like to change things up and try trends? I am going away in a few weeks for a trip abroad where it will be cooler so I started going through my winter/fall boxes of clothes. Some tbings I have owned for several years but I still love them as much as ever.

I laughed because my entire wardrobe revolves around black, camel and gray. I love all those colors together and if one thing is true it’s that I am consistent year to year. One reason why I can justify spending more on this seasons clothes, I typically keep them a long time plus it’s two long seasons. I rarely buy trends, not to say there are not many fun ones, just not my thing, how about you?

As for your TRENDS poll – I truly, truly can not fathom wearing one of the current trends – i.e. “Little House on the Prairie” looks. When I head out to an event or Church – young and old (i.e. over 50) everywhere all look like they just stepped off of WAGON TRAIN! The young might can get away with this – but the mature women look ridiculous.

I absolutely LOVE the story about Christian Bale & his wife! How lovely of them to do this. Have always admired him as an actor & now my respect & admiration for him is over the top!!

Checking through closets with clothing from the past is such fun!
I recently visited family in Jackson, Wyoming from my Oahu home. Searching closets for weather appropriate clothing I re-discovered some fabulous 1990’s Ralph Lauren from the Safari Collection which I wore to dinner at the Snake River Grill (delicious!). Both family and strangers remarked about the outfit…they believed Lauren but not 1990’s.
A consistent, great wardrobe is always in style!
