Having a nice weekend? Hope so. We have had pretty mild weather but its due to get quite cold in NY, so the reality of winter is settling in, not by choice! I am counting down the days until spring. As I slowly getting back to “real life” I am taking it slow,  I feel like I have been living in a cave the last two weeks, haha. Anywho, onward to my post this Sunday-

1 PAPER PLATES HAVE COME A LONG WAY! I went to a friends house a few months ago,  who was moving/moved, so she had a few of us over as a “last hurrah” luncheon and was looking for stylish paper plates since most of her dishes had  already been packed.

I told her I would help her find them and boy did I find them! I was astounded at how far paper plates have come. She ended getting the first ones below but I had to share some of the others I found. I am not  big on paper plates but wow, if I ever needed them, these would more than foot the bill!

4 A SUPER HEARTY AND DELICSIOUS WINTER SOUP I love soup and could honestly live on soup year round. I often double up on recipes so that I can freeze some for a rainy (or snowy) day. Nothing as satisfying as a big bowl of hot soup with a little fresh bread on the side. This one is good, found over at Feelingfoodish (click here for more great recipes)

 

INGREDIENTS-

  • 2 tablespoons oil divided
  • 2 pounds beef (cubed and no larger than ¾ inch) See Note 1
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper to taste
  • 1 cup onion diced
  • 3 stalks celery sliced
  • 2 large carrots sliced or diced (or the equivalent in sliced baby carrots)
  • 2 cloves garlic smashed and minced
  • ½ cup red wine or 3 ounces tomato paste (See Note 2)
  • 1 cup diced tomatos canned is fine
  • 6 cups beef broth up to 8 cups or more (see Note 3)
  • 1 cup barley hulled or pearl (uncooked); don’t use instant
  • 3 bay leaves
  • 2 springs fresh herbs thyme and rosemary suggested; or ½ teaspoon dried (see Note 4)
  • fresh parsley garnish
  • Worcestershire sauce a few splashes (optional for more flavor

DIRECTIONS-

  • Pat beef cubes dry and season with salt and pepper.
  • In a large pot, heat olive oil over medium-high heat. Add the beef cubes and sear/brown on all sides. Do this in batches to avoid overcrowding the pan if necessary. Remove beef and set aside.
  • Add more oil if needed in the same pot and sauté the onions, carrots, and celery until softened (about 4 or 5 minutes). Add the garlic and sauté for another minute.
  • Deglaze the pot with the red wine, scraping up the flavorful bits from the bottom. Continue heating until the wine is reduced by half.
  • Return the beef to the pot. Add the diced tomatoes, beef broth, barley, bay leaves, and thyme/rosemary—season with salt and pepper.
  • Bring to a boil, then reduce to a simmer. Cover and let it simmer for about 1-1.5 hours (less if you used pearl barley; longer if you used hulled barley), or until the beef and barley are tender.
  • Adjust seasonings, remove bay leaves and herb sprigs, and serve hot. Garnish with fresh parsley. Add a few splashes of Worcestershire sauce if desired

I typically do, and even more so since I started my own business:)  I love to bring out seasonal items like my bunnies and eggs, pumpkins and fall leaves and of course goes without saying, I love bringing out my Christmas decor. Dear Tina, I wish you would start carrying these beautiful paper plates and napkins! I have a husband that has to be feed every 2 hours. Trust me, paper is the way I go and these are so classy. I avoid shopping Amazon but would shop with you. Have a wonderful Sunday!

I gave my husband your recipe for the asparagus and gruyere tart. He made it for a dinner party last night and it was a big hit! Everyone finished it and loved it. I just sent him your recipe for this weeks beef and barley soup, I’ll let you know how it turns out!

Her in the northwest the cold air and winds are upon us—I’m not a huge fan if Winter but I promised myself and family I will try not to complain about it too much. Beautiful plastic/paper plates are always in my pantry. You always have such beautiful seasonal items…maybe add another paper line. They are fabulous on the boat, for the little grands at snack time. Hester & Cook and Caspari have many fab options.

You seriously make me want to decorate my house for spring! I’m in South Carolina and beyond ready for warm weather! Going to have to try that soup! Looks delicious!
