Hi friends, hope this finds you well and that you are having a good weekend. Ours was busy with a dinner with friends, Cuba night (such fun and cannot remember the last time I danced), pickle ball and possibly and outing to t the city to have dinner with my son and his girlfriend. Full summer weekend, they are already going by awfully quick!

I am thrilled to announce our new website is in full swing. We had hired another company over a year ago and I was not pleased as I started to see the end result so we ended up reluctantly, having to hire another company to revamp and start anew. Not what I had bargained for after going back and forth for nearly a year!!!! But in the end, it was the right decision and we will get what we wanted all along. With luck, this will launch in August sometime, and yes, we are well aware that a new website is warranted! Can’t wait and think you will agree its worth the wait)

Onward to my post this weekend…….

1 RECIPES!  You asked and I am giving. I have started posting a fair amount of food dishes lately on Instagram and so many asked for the recipes so figured I would post them here today. Guaranteed a fabulous meal and that everyone will love!

MY FAVORITE MIXED GREEK INSPIRED SUMMER SALAD

  • 1-2 heads of butter lettuce
  • 5-6 radishes
  • 2 English cucumbers or 5-6 small Persian cucumbers
  • Fresh dill (approx 1/2-1 cup depending on how much you love dill)
  • 2 stalks finely chopped celery’
  • 2 scallions finely chopped
  • 1/4 cup feta cheese (can use more)
  • 1/2 cup olive oil
  • 1/4 cup fresh lemon juice
  • Salt and pepper to taste (for dressing)
  • Oregano to taste (for dressing)
  • A dash or red wine vinegar

Simply mix in all ingredients, mix in feta only when ready to serve. Toss with dressing (I put mine in a mason jar and keep it in the fridge for up to 2 weeks, goes great with all salads) Serve and enjoy! I will sometimes make this with grilled shrimp which makes it a meal, servers great with steak, chicken, etc….fresh and delicious!

MY FAVORITE SHRIMP SAGANAKI

This is so so delicious.Almost was going to gatekeeper this one but it’s too good to not share.  I make it all the time, and it is always a hit!  This serves about 4 people served with a salad and some kind of side, like rice pilaf or lemon potatoes. For 6 or more I double this recipe. The sauce is so delicious that I always make a side of thin spaghetti for my son who turns it in to a pasta dinner:)

  • 2 lbs the largest shrimp you can find (cleaned and deveined)
  • 1 large chunk of high quality feta cheese
  • 2-3 shallots
  • 6 good sized cloves of garlic
  • 2 TBSP chopped parsley
  • 1 lemon thinly sliced
  • Juice of one lemon put to the side
  • Olive oil
  • Salt, pepper and oregano
  • 1/4 cup white wine (optional) I have done it both ways and either way is delish
  • 3 cartons of Compari tomatoes or something comparable (must be very ripe)

Take your cleaned shrimp, and add half of the chopped garlic, olive oil, half of lemon juice, salt, pepper and oregano and mix well. Cover and put in refrigerator.Take your tomatoes and cut in half, place in a large baking dish, mix in with half the chopped garlic and all shallots. Add the crumbled or chopped feta cheese and mix in. Add olive oil until light coated. Put into a preheated over at 355. Cook until tomatoes are bubbling approx 20-25 min depending on your oven.

Once you take the tomatoes out, carefully fold in the shrimp until mixed well. Mix in lemon slices (remove seeds) Put back into oven for approx 15-20 min deepening  on your oven. I will sometimes do a quick broil for 2 minutes at end. Once it is done, remove and springy with a little lemon juice and chopped parsley. IT is ready to serve. Voila! Sit back and listen to the rave reviews, you can thank me later:)

6 A FABULOUS DOCUMENTARY I have gotten rather addicted to this series. I love that it covers a very wide gamut of subjects. I live for documentaries and could easily do without movies (let’s face it, they do not make movies like they used to) It covers all you need to do about everything from fairytales, skin, hurricanes, chess, the end of oil and everything in between! Love documentaries that teach things as we should never stop learning!

7 SUNDAY’S SURVEY Working on a really fun project I cannot wait to share with you. A very tiny sneak peek of the furniture is below, and there are three combos. Truth is any of these I think looks fabulous, I really like how the pop of the green pulls out the blue pillows just enough. Do you have a favorite combination.

And that is a wrap for this Sunday! I am off to go watch the “pickle ball game” that gathers every Sat and Sunday, it’s such a nice sport to bring friends and family together. Unfortunately my knee which took a beating almost 2 weeks ago is still healing. It was quiet a doozy of a fall so I am still out of commission, maybe next week.
