Hope you are having a nice and enjoyable weekend. Had a nice weekend, dinner with friends and. a lovely shower for my niece getting married soon. Was in NYC and though there was that unmistakable energy that only NYC seems to give off, I realized my city days are well behind me. Was very happy to get back to my green grass, flowers and fresh air:)

It is certainly nice though to have it so close. And cannot wait until things are back to normal (whatever our new normal may be) as I really miss going into the theater and other fun things that only NYC can offer. Onward to my Sunday post…..

2 FAVORITE MASCARA I have mentioned this before but it is worth mentioning again. Thrive mascara is AMAZING. As in the best mascara I have personally used. Only bummer is its not available in stores (not sure why) but you can order it online. It has small microfibers that even with two coats make an instant difference in your lashes, love it! 3 INSTAGRAMS OF INTEREST Such a good roundup celebrating the very best that summer has to offer, with a fall picture thrown in for good measure.  On the 90+ degree days I am ready for fall but give me a high seventies degree day, no humidity with a little breeze and I want summer to stay forever:)

 

4 DELICIOUS RISOTTO! Love risotto? Then you will want to try this relatively easy and super flavorful risotto recipe. I made this the other day and it was sooo good. I love the punch you get from the lemon and what doesn’t taste divine when it has Parmesan in it.:) Got this from Gregory Zakarian, a chef who I really enjoy following. This is super flavorful and such a delicious “comfort food” especially during the colder months ahead. I may just make it tonight on this rainy, gray Sunsay.

Directions

  1. Bring the chicken stock to a simmer in a large saucepan over medium heat.
  2. Meanwhile, heat 2 tablespoons olive oil in a separate large saucepan over medium heat. Add the onion and a touch of salt and cook, stirring often, until the onion is tender, about 8 minutes. Add the rice and cook, stirring, until toasted, about 2 minutes. Add the wine and cook until evaporated, 2 to 4 minutes.
  3. Add 1 cup simmering chicken stock to the rice and cook, stirring constantly, until absorbed. Repeat, adding the stock 1 cup at a time, until the rice is al dente and creamy in texture, about 20 minutes. (You might not use all of the stock.)
  4. When the rice is al dente, remove from the heat and stir in the cheese, chives and lemon juice. Stir in the remaining 1/4 cup olive oil.
  5. Divide the risotto among shallow bowls. Drizzle with olive oil, top with the lemon zest and more chives, and season with salt and peppe

7 SUNDAY’S SURVEY Travel, how I miss it so. I was very tempted to travel twice.Once for a trip planned with friends to Greece and France and the other to a wedding in California. Both of which I changed my mind on and continued on with my strike to not travel.

I think having had Covid, after being super careful really scared me. I am very reluctant to travel, get on a plane, with people who might be harboring Covid or some other air born illness. Curious if you have traveled and how you feel about it in general? It is so temping but I am just incredibly reluctant.

Tina, I have been traveling throughout COVID. Quite honestly, it was so nice to be on empty and very clean planes. I recently wrote a blog post of what I pack in my purse to keep myself healthy during my travels. I’ve traveled more in the last 18 months than ever and haven’t worried one iota. But of course, I make sure I am in tip top shape beforehand. Thanks for the risotto recipe…I will make it tonight for dinner. Happy Sunday. Just curious why Round 1 photo was named winner when the final poll listed photo from Round 2 as having the most votes. Round 2 photo switched to upper position on poll when it went over 50% of the votes.

Hi there had been an error, someone had read the last poll report before the final in which case round 2 ended up being the winner. It was correct yesterday and winner notified:)
