Hi there! Hope you are having a wonderful weekend no doubt probably preparing for Thanksgiving this week. Can you believe November is nearly over? It will soon be full steam onto Christmas over here. Busy, busy days and weeks ahead so am looking forward to enjoying the holiday with some of my family. We cannot all be together this year unfortunately but there will be 8 of us and I anticipate a wonderful day of togetherness, good food and some good ol fashioned game playing:)

Hope whatever you are planning is coming along without a hitch. No one needs the extra stress this year. Don’t know about you but I am really looking forward to turning the page on my beautiful Giddy calendar to 2022! (speaking of they are going fast, perfect little holiday gift, click here to see) Let’s move on to my post this Sunday…..

1 THREE WONDERFUL VIDEOS I so enjoyed these videos last week when I fell a little under the weather and stayed home and went on a serious You Tube video binge.  I watched these on my iPad but you can tune into You Tube on your TV as well.  Of course you an also just watch them on my blog too! I took away a lot of inspiration watching these.

4 AN OPULENT LUNCH This was too pretty to not share. Love the colors, textures and play on patterns. Definitely has me thinking outside the box and possibly redirecting my thoughts on my Thanksgiving table. I find this just breathtaking! Click here to read about this fabulous fetè.

3 ABOUT THOSE TREES! OK I teased you last year about the pagoda trees that I had dreamed up and then showed them about a month or so ago again in hopes that they would become a reality this year. Many of you have asked about them, I needed to address them. With the massive shipping delays and outright crisis/delays, it just was not in the cards for 2021.

The bright side- We had designed something else which was based on our existing  pagoda lanterns but this original design below (the one I really loved) is a more sophisticated version with the flared layers and they will be offered with both small bells or not. It also has a pretty finial.  And this is the one we are doing! What is about those first ideas being your best?

So these have just gone into production (4 colors and 4 sizes).  I will not get them until Feb but on the bright side, you will have them in plenty of time for Christmas 2022 and they are so pretty you may just have to leave the out year round! While I think they re beautiful as trees, they are exquisite as a multi tiered elegant pagoda too! We will offer a preasle on them sometime in the next month. Stay tuned…..

4 INSTAGRAMS OF INTEREST Lots to love this weekend, a beautiful mix of holiday, nature and all around beauty. Enjoy!

5 A FANTASTIC AND EASY CHICKEN PILLARD Made this about a week ago and forgot just how yummy it is. Very satisfying healthy and always a crowd pleaser. For me the key is to pound the think super think, I like it as thin as you can get it; I also added cherry tomatoes to my greens and plenty of cheese on top! If it’s too cold to throw on the grill you can easily saute in a pan with a little bit of olive oil.

I made a side of rosemary potatoes but you can also do a risotto, orzo any kind of pesto pasta goes well. A satisfying, healthy and easy to make dish! It’s also a great luncheonn dish which I have served many times.

  • 4 Chicken breast, boneless skinless halves (pounded very thin)
Produce
  • 8 cups Arugula or mixed greens (I use baby arugula)
  • 1/4 tsp Garlic powder
  • 1/2 Lemon, zest and juice of (I used extra)
Condiments
  • 1/2 tsp Mustard, grainy
Baking & Spices
  • 1 Salt and freshly ground black pepper
Oils & Vinegars
  • 1 Olive oil, Extra-virgin
Dairy
  • 1 Pecorino romano cheese (shaved not grated)
  1. Preheat an outdoor grill to high. (If you hold your hand about 3 inches from the grill grate, you should have to move it within 3 seconds.)
  2. Arrange a chicken breast between two sheets of plastic wrap. Using a meat mallet or small heavy pan, pound the chicken evenly until it is 1/4 inch thick. Remove the plastic wrap and repeat with the remaining chicken breasts; put the paillards on a baking sheet and brush both sides of each piece lightly with oil. In a small bowl, combine 1 teaspoon salt, 1/2 teaspoon pepper and the garlic powder and sprinkle it evenly over both sides of the chicken pieces.
  3. Lightly oil the grill grate with an oil-soaked towel. Grill the chicken, turning once, until cooked through and grill marks appear, about 2 minutes per side. Transfer to a clean platter.
  4. In a large bowl, whisk the lemon zest and juice, mustard and 2 tablespoons oil until combined; season with salt and pepper to taste. Add the arugula to the bowl and toss to evenly coat.
  5. Put a piece of chicken on each of four plates and top with a mound of arugula. Garnish with cheese and more pepper to taste and serve immediately.
6 SAVANNAH AND THE LIVE OAKS. I cannot get enough of them! Every time I would stop at a light I would snap away, there was some beautiful towering oak beckoning. The magnificent live oaks dripping with the Spanish moss just take my breath away every time. Have you been? It’s almost like a museum with every block having a different sculpture….so beautiful!

7 SUNDAY’S SURVEY Thanksgiving is just about here! Where will you be? Off to visit family? Family coming to you? Or maybe keeping it low key. We are going low key in the low country this year:) We know 4 people all fully vaccinated who have gotten covid in the last week…..proof its far from over. I am banking on 2022 being a better and “more normal” year. Your turn to tell me what you will be doing!

what a beautiful Sunday post to wake up to. Love the new trees and will be ordering for sure. I like these better than the others that you had shown. We normally travel to California to my brothers house but with Covid decided to put it off until 2022. I cannot wait to watch those videos they look wonderful. hope you have a nice day Tina!
