We have  had an extremely wet and fairly cold May but hopefully that means a warm, dry June! I am out of town for a couple of days but have this and another post scheduled ahead of time, so fingers crossed they “behave” as they are supposed to! Hope you are having a wonderful weekend, here we go with my Seven on Sunday….

2 ORIENT EXPRESS I mean come on- is there anything more glamorous than boarding the iconic  Venice Simplon Orient Express!!!! The sheer luxury and old world elegance is mind boggling. Know one person who took the Venice to route and said it should be on everyone’s bucket list. 4 A RECIPE YOU WILL WANT TO KNOW ABOUT Discovered this a few months ago and it is soooo good. Easy, healthy (made a few modifications) and good enough to even serve at a dinner party. The mild but flavorful dish is one of those that could satisfy almost any palette. Found it at Lil’Luna, click here to find more wonderful recipes.

Ingredients

  • 4-5 boneless skinless chicken cutlets pounded thin (about 1.25 lbs)
  • salt and pepper
  • 1/2 cup all purpose flour (used half of this)
  • 1-2 tbsp olive oil
  • 2 cloves garlic minced
  • 2 cups chicken broth ( I used vegetable broth)
  • 1/3 cup fresh lemon juice
  • 2 tbsp capers drained and rinsed
  • 1 tbsp unsalted butter
  • 1 tbsp plain Greek yogurt or more to taste
  • angel hair pasta for serving if desired ( I serve it with a vegetable or zucchini spaghetti)
  • sliced lemons for serving (I used a lot of lemon, sliced up 2 lemons)
  • parsley for serving

Directions

    1. Pound chicken cutlets and season with salt and pepper. Roll in flour and shake off excess.

    2. Heat oil in pan. Brown chicken on both sides over medium heat. Remove to a plate when brown, set aside.
    3. Pull pan off the heat and add in minced garlic. Stir. Don’t burn the garlic!
    4. When fragrant, add chicken broth and place pan back on heat. Scrape any brown bits from the bottom of the pan. Heat to a light boil and let sauce cook until reduced a bit.
    5. Add lemon juice and capers. Simmer again until sauce is reduced some and slightly thickened.
    6. Add butter and melt. Add chicken and any liquid on plate. Simmer together over a medium-low heat until sauce is to thickness desired. Pull off heat. Lightly stir in yogurt (can also skip this step and eat without adding yogurt).

 

 

6 VISIT LADY DIANA’S CHILDHOOD HOME! I would love to do this and this almost has me wanting to plot a trip to the UK for this very reason alone. I have always been a huge, huge fan and own almost every book ever written about her, just adored her, she was iconic and everything to me, that a lady should be.

I still get teary eyed thinking of how sad she was in those last few years prior to her death. Such a kind, gentle and good person, good to her very core.  No one will ever replace her. Even her beautiful childhood home seems to embody all that she was. How much fun would it be to visit the beautiful estate where she grew up;.  Well now you can!

From July 1st through August 31st, the home is open to the public (you must purchase tickets in advance).  One of the most exciting things I did not know is that you can also have a wedding at Althorp! Can you imagine? I may need to renew my vows:) Click here for more info…..

 

7  SUNDAY’S SURVEY Are you good at carving time out for yourself? Even under stress and duress, are you good at recognizing when you need a self imposed time out or just a small dose of “me time”? I admittedly am not the best at it,  but am working on it. I tend to do for everyone and not quite mastered the art of giving myself a self imposed time off/time out. I am really trying to work on that as I recognize the benefits and how important self care is during a stressful time. If you have tips, please bring them on:)

Actually it’s not a tip, it’s the probably most important thing I’ve learned in my 63 yrs on planet earth! I stumbled upon it, when we took my father, who is 88 and has memory loss, to The Bright Minds Clinic in Atlanta…. The founders wife Tana Amen has a healthy newsletter and one time she did a series of her favorite meditations. Yes, I know what you are thinking, but hers are for healthy, normal, everyday, very busy people. If you follow her instructions, it’s SO easy to be be calm and happy even with chaos going on around you. From one Teena to another Happy Sunday!

Hi Tina, have you ever watched Hanging Up, with Meg Ryan, I think we all find ourselves in some of her situations, where we just can’t take anymore and to unplug is the only way or you can start becoming resentful, not a good feeling. Thank you for the information on the late Princess Diana’s childhood home tour. I truly admired her charitable work, and how she taught by example. She was a Wonderful Icon of Humanitarianism.
