Hello there, hope you are having a nice weekend. With luck, I will be enjoying my last few days in PB. We had one unusually cold day but for the most part,  temps and the weather has been very pleasant, mid to high 60’s and lots of sun! The down time was/is desperately needed, as this a perfect place to unwind, reset, decompress and relax:)

OK onward to my post this weekend….

1 DANIKA HERRICK WALLPAPER I have spoken of her gorgeous papers before, as I am a huge huge fan. So much so,  that three spaces in our PB home are papered in her gorgeous designs.  Love that all her designs are also available in fabrics, as I am now trying to decide on a fabric to accent the bedroom upstairs. I love that you can custom color, there is pretty much nothing this dynamo cannot do! Click here to see her beautiful designs

2 A DELICIOUS CHICKEN POT PIE Nothing like a warm, stick to your ribs comfort food! In the winter especially and double so when I am in the south. So while in Palmetto Bluff decided to make a chicken pot pie for dinner as we were getting tired of eating out. We both agree nothing beats a home cooked meal, even something very simple.

I combined a few recipes to kind of make my own and I will tell you this was sooo good! I will even argue that the ready made pie crust seriously tasted as good as a homemade crust. So here is what I did-

  • 1 shredded or cut up rotisserie chicken OR pound skinless, boneless chicken breast halves – cubed (to me, rotisserie chicken is the way to go)
  • 3 sliced carrots 
  • 1 cup frozen green peas
  • 3/4 cup sliced celery
  • cup butter
  • 1-2 large Yukon gold potatoes
  • 2 cup chopped onion
  • cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 1/2 cups chicken broth
  • 1/2 cup heavy cream or 2% milk
  • 2 (9 inch) unbaked pie crusts
  • 1/2 teaspoon thyme
  1. Preheat the oven to 375ºF.
  2. In a large pot, melt the butter over medium-high heat, then add the onion, carrot, potatoes and celery. Cook, stirring occasionally, until the onion begins to turn translucent, about 3 minutes.
  3. Stir in the chicken then sprinkle the flour over top and stir it until it’s all combined with the meat and vegetables. Cook for 1 minute, then pour in the chicken broth. Stir and let it cook and thicken. Once it starts to thicken add the salt, pepper, and thyme.
  4. Add the half-and-half or cream, then stir the mixture and let it bubble and thicken, about 3 minutes. If it is too thick, you can add a bit of chicken broth
  5. Pour the filling into an approx 2-quart baking dish. Roll out the pie crust on a floured surface and be sure its soft and pliable (room temp)
  6. Line the bottom of a baking dish with one slightly rolled out (thawed at room temp) pie crust
  7. Pour mixture (after its room temperature, do not do while hot) into baking dish
  8. Add the top layer of pie crust
  9. Mix together the egg with 2 tablespoons of water and brush it all over the surface of the crust. Use a fork to make around 6-8 indentations (so heat can escape)
  10. Place the pie on a baking sheet and bake until the crust is deep golden brown and the filling is bubbly, 30-40 minutes. To prevent the crust from getting too brown, you might want to cover it lightly with foil for the last 10 minutes of baking

3 INSTAGRAMS OF INTEREST Mostly interiors this weekend as I am starting to daydream about our future renovation, cannot happen a moment too soon, can never pass up an irresistible  cute golden retriever!

4 ONE STUNNING HOLIDAY HOUSE I am a fan of Cathy Graham and her fabulous taste and floral designs. I fell in love with her beautiful apt in NYC, even though that was not the main focus of this video. Just a lot of gorgeousness to take in…

 

5 TWO CAPTIVATING DOCS ON NETFLIX If you like financial documentaries these are not to be missed. However I will forewarn you the outcome especially of the first one will leave you steaming mad! I have lost all faith in the FBI after watching this story. Very interesting, enlightening and proof that intense, unstoppable at all costs,  hunger for greed and power is real.

 

6 SNEAK PEEK AT OUR SPRING/EASTER EGGS. I am so excited over this new egg collection. They are simply sunning, some of my best work to date! We will offer them in a new smaller 4″ egg, the 6″ and the big 24″ (perfect for front doors, consoles, etc…) I promise you, that you will be hard pressed to find prettier eggs! Here is a sneak peek, we will hold a presale in about 2 weeks, stay tuned:)

 

7 SUNDAY’S SURVEY I was listening to an interesting podcast and it was about the declining happiness and general satisfaction of most Americans, especially in stark contrast to some other much happier countries. Of course Covid surely had an impact, but there’s so much more not the least of which is that we are the most medicated country not the entire planet. Very sad but true.

One recent report shows that more than 50% of our population under 60 is medicated. That was startling. There were many more reasons for this and one group that was particularly vulnerable were the millennial and GenZ group. Personally I think social media has a lot to do with all of this. So I am curious where you stand on the happiness scale overall…..

I am not much of a cook but my husband LOVES chicken pot pie so I may need to attempt this.

Always love your movie recommendations. I would say I am a reasonably happy person, daughter eating married in June, soon graduating from law school this fall. But my parents are aging and both struggling with health so that puts a dark cloud over my general state of happiness. Hard to see them this way, as I know you are well aware.
A reminder to us all to seize every single day and live with no regrets!

I wish that I could say that I am totally happy. My husband is in the mid stage of Alzheimer’s, yet I feel peace and happiness. Try using a Marie Calendar’s’ pre-made pie crust and use puff pastry on top.

I actually loved the way the pie crusts worked, light and flaky, they were perfect!

I think I am a pretty happy/optimistic person. I have twins (8 years old) and a 15 year old stepson so busy days here not without stress but overall cannot complain especially when you see wants happening in Gaza. My heart breaks daily for those poor people.

I’m not sure why you have lost faith in the FBI. I’m also not sure if you realize one of the main tactics of authoritarian regimes is to create doubt in all governmental departments . There is a concerted effort to do this k. The US and unless you want to live under an authoritarian dictator Putin, the leaders of China, North Korea and Hungary we must resist these tactics. Additionally with inven of AI we can’t believe everything we see on Utube, Facebook or “X”, etc.
