So…hope you are having some nice springy weather wherever you might be. Here it is arriving slowly but I am ready and waiting. To me, spring is a rebirth and a chance to start anew. I love the idea of doing spring cleaning and have been doing a lot of it and beautifying my home with touches of fresh flowers, beautifully scented candles and of course that unmistakable fresh spring air:)

1  INSPIRING STORY OF THE WEEK Meet Roman, a modern day dog whisperer in a little boy’s body. What a beautiful soul this kid has, I love the new life he gives these shelter dogs. How inspiring when you see someone doing something they are meant to do even if it’s at 7 years old!

2 ONE BEAUTIFUL WEDDING I love checking out beautiful parties and weddings. I consider it part of my “investigative research” (makes it sound more official). This one is so so pretty, thought it was worth sharing, and of course the fact that it’s color scheme was blue and white makes it extra special. 3 INSTAGRAMS OF INTEREST If there is a theme (not intentionally) it’s about freight cities and springtime. Somehow this weekend it just ended up that way, and what a beautiful combination it is!

 

4 A WONDERFUL VIDEO ON THE SATURDAY MARKET IN PROVENCE. I see this and so wish I could instantly be transported back to this idyllic place where things move a little slower and the simples pleasures in life are celebrated on a daily basis. If this does not whet your appetite to visit Provence not sure what will…..magical if you ask me!

6. NEW RECIPE ALERT If you love seafood and namely fish,  like I do, you will LOVE this recipe. I tried it for the first time about 3 weeks ago and made it again last week. It is so easy and so flavorful, best part guilt free and very healthy! It calls for heavy cream and what I did was add only 2 TBSP but added extra dill, lemon and shallots. Meat
  • 4 Filets of salmon, center cut
Produce
  • 1/4 cup Dill, fresh
  • 1 Lemon, juice of
  • 1 Lemon, thin slices
  • 1 Shallot, large
Condiments
  • 3 tbsp Capers
Baking & Spices
  • 1 Salt and fresh cracked black pepper
Oils & Vinegars
  • 1 Olive oil
Dairy
  • 1 cup Heavy cream *here is where I changed this up, only added 2 TBSP of cream
Beer, Wine & Liquor
  • 1/4 cup White wine
Other
  • garnish
  • more fresh chopped dill

7  SUNDAY’S  SURVEY This has to do with travel. I love to travel and though we used to do it way more than we used to, one of my hopes is to get back on  track and start traveling more again this year.  A friend of mine who I would say is the most traveled person I know has told me about so many resources and apps that all involve travel.

It is kind of dizzying and requires some travel saaviness that I don’t think I have, plus I do like using a travel agent mostly because they take care of everything and therefore make my job a lot easier. I use one for out of country travel but can handle things when traveling on my home turf of the U.S. So…….curious how you handle travel plans?

On the subject of travel, we have a great travel agent who we use only for trips outside the US. She just planned a wonderful trip we Re taking in July starting in Rome, going through Tuscany and Florence and ending up on the Amalfi Coast! Cannot wait and she was worth every penny for her knowledge. D expertise.
